Pancake Day, aka Shrove Tuesday in the UK and Ireland, is the day for eating traditional pancakes that are thin and crepe-like; the true pancake of this day!
Making pancakes is a ‘big thing’ in the UK! Although they are quick, easy and cheap to make, it’s not very often we actually eat them here. So when we do, I have to make sure i prepare plenty, as there won’t be any left!!
100g plain flour
2 large eggs
1 tbsp vegetable oil, plus a little extra for frying
lemon wedges, caster sugar, golden syrup, fruit, Nutella to serve (all optional)
Put 100g plain flour, 2 large eggs, 300ml milk and 1 tbsp vegetable oil into a bowl and whisk to a smooth batter.
You should set the mixture aside for 30 mins to rest – if you have time, but you can start cooking straight away…. like my kids are going wait half an hour for pancakes! *eye roll*
Set a medium frying pan over a medium heat and carefully wipe it with some oiled kitchen paper or spray with 1kal oil.
Once the pan is hot, ladle in your pancake mix, thinly to coat the pan. Cook your pancakes for about 1 min on each side until golden. It is a known “law” that you can only cook them on both sides here in the UK by tossing them in the pan – whilst trying not to get them stuck on the ceiling!
You can keep your pancakes warm in a low oven as you go.
Traditionally English Pancakes are served with lemon wedges and caster sugar. We like ours with golden syrup (nom nom), Nutella or fruit.
Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months for perfect pancakes anytime!
