Transform a basic boring baked spud into a rich, melted cheese filled taste explosion!
These super filled potato stuffies are so delicious and easy to make. A simple meal that the whole family will love. Perfect for those chillier evenings.
Ingredients:
4 medium baking potatoes
1 onion, finely sliced
bacon, chopped
cheese
chopped parsley
Method:
Heat oven to 200C.
Prick the potatoes all over with a fork, then rub with half the oil, some sea salt and black pepper. Arrange on a baking tray and bake in the oven for about 1 hr 15 mins, until their skins are crisp and they are completely tender when prodded…. Or … pop them in the microwave for 8 minutes, flip them over and cook for a further 5 minutes, roughly. You can crisp them off in the oven after if you wish.
Meanwhile. Gently cook the onion in a pan until softened and golden. Remove from the pan and set aside, add the chopped bacon and fry until just crisp.
Halve each potato lengthways when ready (watch out, they will be hot), then scoop out most of the potato into a bowl, leaving a potato skin shell with a thin layer of potato.
In the bowl, crush the potato with a smidge of butter. Season with salt and pepper. Fold in the onion, bacon, three-quarters of the cheeses and half the parsley. Mix well.
Spoon the mixture back into the potato shells and top with the remaining cheese.
Transfer to the baking tray and return to the oven for 10-15 mins, until melting and golden. Sprinkle with the remaining parsley and serve.
This recipe can be adapted so easily. Itβs entirely up to you what you stuff them with. Broccoli and cheese. Beans. Sausage. The list is endless. Allβs I know is that theyβre a favourite in my house!
