Vegetable & Halloumi One Pot

This dish is an Autumn winner!

This recipe packs a punch for flavour, it’s so simple and the best part is that you have a plate full of deliciously tasty roasted veggies and only one pot to wash! What’s not to love!

You can throw in any of your favourite herbs and spices along the way with lots of yummy garlic. In other words, whatever vegetables you have in the fridge are not going to waste. Bonus!

Cooking Time is 30 minutes. Enough time to pour yourself a nice glass of wine and put your feet up.

Ingredients:

A variety of vegetables – anything that you have will work (pumpkin, Carrots, sweet potato, parsnips, potatoes).

1 packet of Halloumi.

1 – 2 onions.

2 cloves of garlic, finely chopped.

Salt, pepper and fresh herbs (rosemary, basil, oregano).

Method:

Preheat the oven to 200°C and chop up all your vegetables into small chunks and toss them in an oil sprayed baking dish.

Chop up the Halloumi and add to baking dish.

Sprinkle in finely chopped garlic, roughly chopped onion and mix well to coat.

Add any extra herbs or spices to your liking and place in oven to bake for 30 minutes.

Serve on a hot plate and season with salt and pepper.

A tasty hearty meal that takes little time to prepare and makes enough filling for a tortilla wrap or pita or perhaps as a side dish with some juicy chicken.
